  • 1 tsp salt
  • Water (for boiling)

  • 40g (2 ½ tbsp) gochujang (Korean chili paste)
  • 1 tsp chili powder
  • 20g (1 ½ tbsp) sugar
  • 5g (1 clove) garlic, minced
  • 5ml (1 tsp) apple cider vinegar
  • 12ml (2 ½ tsp) soy sauce
  • 50g (⅓ cup) kimchi, chopped
  • 10g (2 tsp) sesame oil

For Toppings:

  • 1 boiled egg (medium heat for 7 minutes, then cooled in ice water)
  • Cucumber, julienned
  • Sesame seeds

Instructions:

Step 1: Boil the Egg & Prepare Noodles

  1. Boil an egg over medium heat for 7 minutes, then transfer it to cold water. Peel and set aside.
  2. Bring a pot of water to a boil, add 1 tsp salt, and cook the noodles for 4 minutes (or according to package instructions).
  3. Drain and rinse the noodles under cold water to stop cooking and achieve a chewy texture.

Step 2: Make the Spicy Sauce

  1. In a bowl, mix gochujang, chili powder, sugar, minced garlic, apple cider vinegar, soy sauce, kimchi, and sesame oil until smooth.
