Spicy Bibim Guksu Recipe
Ingredients:
For the Noodles:
- 180g (6 oz) noodles (thin wheat or somen noodles)
- 1 tsp salt
- Water (for boiling)
For the Sauce:
- 40g (2 ½ tbsp) gochujang (Korean chili paste)
- 1 tsp chili powder
- 20g (1 ½ tbsp) sugar
- 5g (1 clove) garlic, minced
- 5ml (1 tsp) apple cider vinegar
- 12ml (2 ½ tsp) soy sauce
- 50g (⅓ cup) kimchi, chopped
- 10g (2 tsp) sesame oil
For Toppings:
- 1 boiled egg (medium heat for 7 minutes, then cooled in ice water)
- Cucumber, julienned
- Sesame seeds
Instructions:
Step 1: Boil the Egg & Prepare Noodles
- Boil an egg over medium heat for 7 minutes, then transfer it to cold water. Peel and set aside.
- Bring a pot of water to a boil, add 1 tsp salt, and cook the noodles for 4 minutes (or according to package instructions).
- Drain and rinse the noodles under cold water to stop cooking and achieve a chewy texture.
Step 2: Make the Spicy Sauce
- In a bowl, mix gochujang, chili powder, sugar, minced garlic, apple cider vinegar, soy sauce, kimchi, and sesame oil until smooth.
