  • 12g (1 tbsp) cornstarch
  • 75g (⅓ cup) sugar
  • 1 egg
  • 1 egg yolk
  • 140g (½ cup) sour cream
  • 110g (½ cup) heavy cream
  • 10ml (2 tsp) lemon juice
  • 1 tsp vanilla extract

Strawberry Topping:

  • 120g (1 cup) strawberries, chopped
  • 5ml (1 tsp) lemon juice
  • 30g (2 tbsp) sugar

Instructions:

Step 1: Prepare the Crust

  1. Preheat the oven to 160°C (320°F).
  2. Crush the biscuits into fine crumbs and mix with melted butter.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Bake for 10 minutes, then set aside to cool.

Step 2: Make the Cheesecake Batter

Step 3: Bake the Cheesecake

  1. Pour the cheesecake batter over the crust, smoothing the top.
  2. Wrap the pan with foil and place it in a larger baking dish. Fill the dish with hot water (water bath method) to prevent cracks.

Step 4: Chill & Prepare the Topping

  1. Refrigerate the cheesecake for at least 5 hours (or overnight) to set.
  2. Meanwhile, cook strawberries, lemon juice, and sugar over low heat for 12 minutes until thick and syrupy. Let cool.

Step 5: Serve & Enjoy!
